Put water to boil and add the salted pork backbone (previously washed) and a veal bone. It is not listed in the ingredients because it did not come out.

Wash the vegetables and roast them (I used xenos but cabbage will do). Peel and cut the potatoes into small pieces that fit in the spoon when eating.

When the bones have been a while, add the potato, the vegetables and the white beans. Let them cook over low heat.

When everything is almost done, I remove the bones (if you add meat it is better to remove it so it doesn't harden) and add the whole chorizo to give it a touch of flavor (I don't eat it because I hate it but my partner loves it).
