Russian salad with homemade mayonnaise

In my case I prepared the salad salad for two people. First we put water in a casserole and let it start to boil. Add 4 potatoes with skin, after 30' add a carrot and after 40' add two eggs. Once the time has elapsed, put aside and remove the water.

Let cool and peel the potatoes, carrots and two eggs. Dice together with half a green bell pepper, half a red bell pepper, a can of tuna, lettuce and a little onion.

For the mayonnaise: We boil 4 eggs and then peel and beat together with 4 tablespoons of olive oil, 4 tablespoons of water, juice of a medium lemon or half a large lemon and a little salt. Depending on the texture we can add a little more water. IT IS IMPORTANT TO BEAT EVERYTHING WHEN THE BOILED EGG IS COLD. This will help in the consistency of the mayonnaise.

Put everything together and decorate with some chopped olives and some whole olives.
