Homemade pizza with chickpea dough

The first thing is to prepare the dough, it can be made with chickpea flour or with dried chickpeas, in this case they are crushed in a food processor such as thermomix and the result is the same.

Mix the chickpea flour with the salt, pepper, oregano and garlic powder. Then add a glass and a half of water and stir with a fork until the mixture is homogeneous (you can use a hand blender if you want). It doesn't matter if the mixture is a little liquid, it will be easier to spread it later.

Preheat the oven to 180°, prepare a tray with parchment paper and grease it with a little EVOO so that the dough does not stick. Add directly the dough we have prepared and spread it with the help of a spoon (if it sticks to the dough, wet it with water, it is a little trick). Once spread, bake in the oven.

While the dough is being made we prepare the toppings, we usually make half of vegetables and the other half of whatever we have in the fridge (this time turkey, bacon, a little bit of spicy chorizo and onion).

Chop the peppers and one onion into julienne strips and sauté, salt and pepper to taste, when it is half done add the mushrooms.

At the same time, in another frying pan, sauté the other onion, then add the turkey, bacon and chorizo until everything is done.

The dough is done when it is hard and the edges are golden brown. Then we take it out, put a layer of fried tomato on top and the parmesan cheese.

Add the toppings previously prepared and add the mozzarella on top.
