Risotto with wild green beans and goat cheese

In a small pot with a little olive oil, fry the onion and garlic very finely chopped, together with the wild asparagus cut to taste. Add a splash of white wine and when it evaporates, add the goat cheese, as much as you like, and let it melt. Season with salt and pepper.

When everything is soft, add the rice, stir well and cover with water. 1 cup = 3.5 cups of water. Boil for 16-20 minutes, stirring from time to time.

Season with salt and pepper and add a little nutmeg, it gives a rich touch, serve with grated Parmesan.
