Peel the carrots, wash and chop them. Cook them together with the half onion in pieces, salt and pepper until they are soft (approx. 20 minutes). Drain and mash to a puree.

Mix the puree with the egg, then add, little by little, 250 g of whole wheat flour and knead. Shape the dough with your fingers to make the gnocchi. These can be frozen for storage.

Cook the gnocchi in abundant water until they rise to the surface.

In a frying pan, add a spoonful of EVOO and sauté the garlic and the chopped almonds until they get color. Add the diced ham, the diced dried tomato and the basil leaves. Finally add the gnocchi and sauté everything together for a few minutes. Let's eat 🍽
