First of all, the recipe has spices, I put: salt, pepper, curry, ginger, turmeric, Ras el Hanout, ground cumin and cinnamon. I added the green bell pepper and celery because I had them half-poached in the fridge and I wanted to use them up, but they are optional.

That said, here is the recipe: We put the rice to boil as indicated on the package.

Chop all the vegetables and fry them in a frying pan with 2-3 tablespoons of EVOO. Season with salt and pepper.

After 6-7 minutes add the spices. Stir well.

Meanwhile, we cut the seitan into cubes and add them to the sauce. We are stirring so that it takes the flavor of the spices and the sofrito.

After 5-6 minutes add the whole can of coconut milk. Stir well and add salt and spices. I added a little more curry and turmeric to give it more color.

Stir and after 10 minutes turn off the heat and plate.
