Mix the eggs with the protein. Preferably with an electric mixer to make it more homogeneous.

Put 2/3 of the milk in a saucepan and in the rest of the milk (cold) dilute the cornstarch to avoid lumps. Add the vanilla to the milk.

Mix step 1 and 2 and add to the pot again to heat over medium-low heat and stirring constantly.

Allow to cool and place in the refrigerator.

Optional: add lemon zest to the mixture.
