Potatoes with banana sauce and carrotchips

Cut the potatoes into cubes and put them in cooking with a pinch of salt (the time will depend on the thickness of the cut, it is best to go looking depending tb if we like more tight or softer potato) once cooked reserve in the refrigerator. Meanwhile we cut the leek and onion and poach in a pan

When the vegetables are transparent, add the sliced plantain.

After 3' add the coconut vegetable drink and let it reduce.

When it has reduced whisk all the ingredients in the pan until it becomes a paste (if you like it more liquid you can add more coconut milk until you achieve the desired texture).

For the carrotchips: heat the oven to 200gr and cut the carrots into sticks.... place them on the baking tray and add oil and spices to taste (I add garlic powder, black pepper and oregano).

Approx. 10' in the oven and ready!

Serve!!!! (once I put the banana sauce over the potatoes I added dill, but this is to taste). Enjoy it!
