First, so that the sauce has more flavor, we will make a fumet with the shrimp heads and shells. To do this, we put in a pot extra virgin olive oil to heat, put 2 garlic and fry. Add the shrimp heads and shells, fry for a few minutes and when they are golden brown, add water to cover them. During the cooking we must remove the foam that comes off, since they are impurities. After cooking for about 20 minutes, strain the broth twice.

Flour the cod and fry it. When finished, remove the oil and put the shrimp in the frying pan. Remove for later use.

Cut the 3 garlic, the leek and the onion. In a frying pan, fry the garlic first and then add the rest of the ingredients. Season with salt and pepper to taste and once it is well fried, add the two tomatoes that we have previously grated. When it is ready, add a handful of parsley and white wine. Put on high heat and let the wine reduce.

Add the fumet to taste, according to the desired broth. Leave it for a few minutes and add the cod and the shrimps. We leave it over medium heat for about 10 minutes. If you have leftover fumet, you can freeze it for another occasion.
