Cook the rice, edamame and beans, I steam them in the microwave.

Cut the avocado, cucumber, tomato and mushrooms into slices.

In a frying pan sauté the mushrooms and salt and pepper.

Drain the tofu and cut into cubes. It can be cooked in a pan with a little soy sauce or eaten raw.

Layer everything in a bowl, starting with the rice at the bottom.

Drizzle soy sauce over the top.
