Pitahaya pancakes with mascarpone cream

In a bowl we mix the wet ingredients: beat the eggs, add the banana (a little ripe to sweeten more) previously crushed, a little crushed pitahaya, a glass of milk and the vanilla aroma.

Add the dry ingredients: sifted oat flour, a little salt and the baking soda (for fluffiness).

We put a pancake pan with a little EVOO over medium heat, and with the help of a spoon we put a little of the mixture and fry for a minute, turn and turn.

When the pancakes are ready (about 10 or so), put them on a plate and set aside. Beat the white of one egg and add two tablespoons of mascarpone cheese, mix well until you get a cream that is neither too liquid nor solid. We add it on top of our pancakes. We also add a little more crushed pitahaya and some chopped strawberries on top. And voilà, enjoy!!!!!
