Peel, wash and cut the potatoes into not very large and thin pieces. Set them aside for a few minutes while we prepare the onion.

Peel the onion and cut it into pieces. In the meantime, we heat the oil. We pass the onion through the blender mini chopper or through the blender so that it is not noticeable in our omelet but if it has onion.

Add the potato and onion to the pan.

Beat the eggs and leave them ready to mix with the potatoes and onion.

Once the potatoes and onion are ready, take them out and mix them with the egg. Mix them well so that everything takes consistency. Remove the oil from the pan.

Once the oil is removed, add the mixture and move the pan so that the outside is well done and the inside is juicy.

We take what we use to flip it and turn it over. We do the same, stirring the pan so that the omelet is well done on the outside and stays juicy.
