First we cut all the vegetables into strips except the mushrooms, which we will cut into slices (they can be bought already sliced).

First add the onion with a pinch of salt and the tablespoon of oil. Let it poach for 2 minutes and add the rest of the vegetables in the pan (more convenient wok pan), let it simmer for 45 minutes. After 10 minutes sprinkle a little black pepper to taste.

After the vegetables have been cooked for 45 minutes, add the soy sauce and cook for 5 more minutes.
