Pumpkin and lentil pie

Cut the garlic and put it in a frying pan with EVOO until poached. Add also the onion, bell pepper and carrot cut in small squares. Add a pinch of curry, a pinch of pepper, a pinch of hot paprika and some parsley. Add salt also and brown it all.

In an express pot cook two medium potatoes and the pumpkin. 12 minutes is enough.

To the sautéed vegetables, add the washed lentils and sauté them with the rest for a while, not too much, as the lentils will fall apart.

When the pumpkin and potato are cooked, mash adding pepper and salt to create a puree (the thicker the better).

In a microwave safe bowl, put the lentil and vegetable sauté and add the pumpkin and potato puree on top. Finally, add cheese to taste and gratinate for a few minutes.
