Cut the onion into julienne strips and the peppers, carrots and tomato into small pieces. Set aside.

Clean the cheeks well, to remove the fat. NOTE: it is 1.5 kg of PORK CHEEKS (this product was not included in the application and I have put something similar).

Pour EVOO in a pressure cooker and sear the cheeks over high heat. Remove to a plate and set aside.

In the same pot where we have sealed the cheeks, sauté the reserved onion, carrots, peppers, tomato and garlic clove.

When everything is poached, add the two cayenne peppers and the seared cheeks.

Pour 1 bottle of red wine, until it is covered, and cover the pot. When the pressure rises, lower the heat to medium and cook for 1 hour.

When ready, remove the cheeks and mash the vegetables until the desired texture is obtained (if it is thick, add broth or water).

Allow to stand for a few hours before eating (it is best left to stand overnight).
