FOR THE CRÊPE BATTER: Mix the flour (200g), eggs (3 pcs) and milk (250 ml). Beat with the mixer and let stand. The quantities I used for 6 crêpes were as described below In a frying pan (I used a crepe pan, but you can use a non-stick pan or add a little EVOO), pour a little more than a tablespoon of batter and spread it so that it is not too thick. When bubbles start to come out, turn it over.

FOR THE STUFFING: In a frying pan with a little EVOO, sauté the chopped onion and mushroom and cook until soft and golden brown. Set aside

Dice the chicken and season with salt and pepper and cook in the frying pan. Add the mushroom and the onion that we had reserved. Add the grated cheese, evaporated milk and stir until it melts. You can add spices to taste (I used pepper, nutmeg and oregano).
