Preheat the oven to 180°c, cut the onion into julienne strips and the potato like potatoes but thicker, about 0.5cm.

Put a baking paper on a cold baking tray so that it does not stick, put a bed of onion, cover the onion with the potato and season with salt and pepper.

Bake in the oven for 10 minutes without the fish.

After 10 minutes, remove the tray, place the fish on top, season with salt and pepper and put it back in for 10 minutes.

Make a green sauce with the garlic and parsley crushing it in a mortar, add the oil, when it is a few minutes before it is ready, put the sauce on the fish.
