Pumpkin stuffed with cheese and walnuts

Cut the pumpkin in half lengthwise and empty it little by little. All the pulp and pumpkin that you take out you reserve it and the carcass (which still has some pumpkin) you salt and pepper it, put two tablespoons of oil and put it in the oven for 30 min at 200°C.

Cut the onion and fry it over low heat, then add the diced pumpkin pulp and the cheese together with the walnuts. It should not take more than 15 minutes.

Once 30 minutes have passed since we put the pumpkin in the oven, we take it out, fill it with the mixture from the pan and leave it in the oven for another 15 minutes.

When you take it out, wait a little bit or you will end up burning yourself with the melted cheese like me ;)
