Spinach and ricotta stuffed zucchini

Wash the zucchini well. Dry them with a cloth, remove the top and cut them lengthwise. To each half, we make transverse cuts taking care not to pierce the skin, and with the help of a spoon we empty them. Reserve all the pulp in a container. Add a dash of EVOO and place them on a baking tray lined with parchment paper. Bake them for about 10 minutes at 200 ºC with heat up and down.

Add a little olive oil in a frying pan and sauté the spinach and zucchini pulp. Add a pinch of salt and pepper. In a separate bowl mix the ricotta cheese with the spinach and pulp.

Stuff the zucchini and grate Parmesan cheese on top. Bake in the oven for 5 minutes at 220ºC. Remove from the oven and assemble the dish with two halves, i.e. one zucchini per person.
