In a bowl put the peel or zest of a lemon and its juice, the cream of dates or 100g of dates, coconut oil and extra virgin olive oil, and take it to the micro for 10 seconds.

Whisk the liquid part a little and in another bowl add the 100g of oat flour, or ground oatmeal, a teaspoon of baking powder, a teaspoon of cinnamon and a teaspoon of aniseed powder.

Gradually add the dry part to the liquid bowl and stir. When everything is integrated, turn on the oven at 190° and make the shape of the cookies. Here add pieces of nuts, chocolate, whatever you want :) When you put them in the oven turn it down to 175 or 170°. 10 min and see how they go. It depends on whether you want them softer or crunchier.
