The sizes of the peppers: they are small and can be used yellow tb. We cook the potatoes with skin previously washed. The peppers we cut the top cover and clean them inside, wash them and leave them face down in a colander.

While the potatoes are cooking, poach the onion in a frying pan. When the onion is transparent or poached, remove the pan from the heat and add 2 teaspoons of paprika. Reserve

We take the potatoes and peel them. I usually mash them with my hands because the pasa pure gets on my nerves. Once the potatoes are mashed add the onion that we have reserved before and mix. Then add the spices and salt and stuff the peppers.

I place them on a glass tray and bake them at 200° for 20 to 30 minutes. Keep an eye on them but it is easy to know when they are ready.
