Pasta with bell pepper and ricotta sauce

Heat a drizzle of olive oil with a garlic for 2-3 minuti over low heat. Add peppers and cherrys. Cover and cover. Cook for 10 minutes.

Bring a LARGE pot of salted water to a boil!

Remove the garlic from the pasta, set aside. Cook the pasta al dente or 1 minute less. Mash the ricotta with a fork.

Blend the rest of the ingredients in a blender with the basil. Return to the pan. Together with the ricotta and the pasta and 2 ladles of the cooking water.

Sauté everything for 1 minute. Serve hot.

I would make a nice plate of steamed leafy vegetables to go with it: chard, collard greens, cabbage, turnip greens, spinach....
