Chop the onion and leek and sauté them in a pot with a little olive oil. When they start to soften, add the peeled and chopped potato. Fry for a couple of minutes more.

Add the frozen peas and cover with water. When it starts to boil, add a little salt and pepper. Lower to medium heat and simmer gently for 15 minutes. Poke the potato to check that it is done.

Before blending, check the amount of water it contains and remove a little if you think it might be too liquid. Blend and pass the cream through a strainer if you want it finer.

To serve, garnish each bowl of cream with a spoonful of plain Greek yogurt (kefir or natural yogurt), some pumpkin seeds, sesame seeds, some fresh mint leaves and some peas that I set aside before mashing. Enjoy! It's delicious 😋
