Quinoa and Bulgur with vegetables

Peel and cut the vegetables and cook them in a casserole with 5 gr of EVOO (season to taste) for 20 minutes.

Remove and sauté the vegetables with 5 gr of EVOO and set aside.

Cook the quinoa and bulgur in the same water used to cook the vegetables, adding the curcuma, for 12 minutes (then drain well).

Serve and spoon the butter over the quinoa. Serve hot.
