Cut the zucchini, onion and leek and sauté them in the pan with the oil, salt and spices. After 5' or so I added vegetable broth.

Peel and cut the potatoes in slices and put them in the microwave with olive oil for about 8-10', making 2 stops and stirring.

Beat the eggs and add a little salt.

Once the vegetables and potatoes are done, put them together in the pie dish and add cheese and stir everything together, then add the egg, stir again and finally more cheese on top. Put it in the oven until the egg is cooked and the cheese is crispy.
