Curried broccoli with red rice

Put a saucepan to cook with a pinch of salt. Heat oil in a frying pan over medium heat and add the chopped onion. After 2 minutes add the sliced mushrooms and when everything is poached add the broccoli. Stir well for 5 minutes, add the curry and season with salt and pepper. Add the rice once the water is boiling.

Add the coconut milk and let it evaporate to obtain a creamy texture. After 20 minutes, when the rice is done, strain it and pour it on one side of the dish. Add the sauce to the other side and that's it.
