First, cut the seitan into large cubes and fry it with a little olive oil and its own juices over high heat. It is removed from the pan when it is a little browned.

In the same saucepan, sauté the garlic and onion finely chopped, once the onion begins to be transparent, add the peeled tomato cut into small pieces or grated, and the paprika (plus the spices you want).

Once the sofrito is more or less done, add the sliced carrot.

Add the flour and stir it very well so that it cooks and does not stick too much. After about 2 minutes add the wine and turn up the heat so that the alcohol evaporates, then turn it down again.

Put the seitan back in, together with the peas and the potato (if you want it cooked). Mix everything together and add the vegetable broth until everything is well covered. It is left cooking all together during half an hour.

I added the baked potatoes, which gives it a very nice touch, I did them first a few minutes in the microwave wrapped in plastic wrap, then I cut them, spiced them and left them in the oven for about 20 minutes.
