Preheat the oven to 180°. Split the zucchini in two halves (horizontally) and empty it. Add a little salt and put it in the oven.

Dice the onion, the peppers and the zucchini stuffing and fry it in a frying pan with a dash of EVOO. Season with salt and pepper. Once ready, add the crushed tomato and let it all mix well.

Remove the pan from the heat, add the texturized soybeans and cover it for at least 10 minutes. In this way we will hydrate the soybeans. If we see that some liquid is missing, we add little by little water or homemade broth.

Remove the zucchini from the oven and add some mozzarella. Fill it with the soy and tomato mixture and add some mozzarella again.

Bake in the oven for about 5 minutes and gratinate at 250° for another 5 minutes. And ready!!!!
