Artichokes with ham and egg

If you start with good homemade cooked artichokes, -I prepared this stew with frozen artichokes from this season- it won't take you long to make this dish. If you start with raw artichokes, you will have to clean and cook them beforehand.

Chop the garlic and onion well and poach them over low heat in the pan so that they are very soft. During the process, cut the artichokes in halves and toast them until golden brown. We can do it in two batches of 4 halves.

Mix well the roasted artichokes with the well poached onion and add the ham, letting it cook until it looks like York ham. Add the white wine and the artichoke cooking broth, along with a few drops of lemon juice. and turn up the heat to bring to a boil.

Normally it is not necessary to use salt, being enough with the one provided by the ham. But you can taste and rectify if necessary.
