Cut the onion and bell pepper into small pieces.

In a frying pan, cook it with a little EVOO until it is poached and soft.

Crumble the cod (desalted) into medium-small pieces. Add them to the pan with the onion and bell pepper.

In a plate or bowl, crack the eggs and beat them. It is normal not to add salt, since cod is a somewhat strong fish. It is better to rectify later if it lacks salt.

When the cod is cooked (do not overcook it or it will have a bad texture), remove the pan, add the eggs and the parsley (previously chopped), and give it a quick turn so that it curdles underneath.

A small turn is enough to give it that creamy and soft texture. If you like it more done, you can leave it longer.
