Heat the oven up and down at 180°.

Grate the cauliflower and squeeze it in a cloth until all the water comes out. Once the water is removed add the egg, put it on the baking sheet giving it the desired shape and put it in the oven.

Meanwhile in a frying pan we put to poach the cherry tomatoes with a drizzle of oil. When we see that they are more or less done add the spices that we like (in this case I have added oregano, basil and a little bit of ground pepper). Sauté everything well and remove from the heat.

When we see that our pizza dough is ready (more or less 20 minutes) we take it out of the oven and put on top the crushed tomato, the cherry tomatoes and add the mozzarella in small pieces.

Put everything back in the oven (3' approx) to melt the mozzarella. Remove from the oven and ready to eat!
