Peel the potato and cut it into slices (I use a mandolin). Cut the onion and bell pepper into strips and put everything in a microwave-safe container. Salt to taste and add a few drops of oil. Ten minutes at maximum power.

Remove from the microwave and blend with a fork or a shovel so that it is as crumbly as possible.

Beat the eggs and mix everything together.

In a frying pan put a little oil and when it is hot pour the mixture. Let it cook to taste and eat !
