Chop the onion and place it in a large pot (red cabbage takes up a lot of space) with the EVOO.

While the onion is being pricked a little, cut, clean, wash and drain the red cabbage. Add it to the pot (it gets smaller as it cooks, do not worry if it almost comes out).

Soak the raisins in white wine. Peel the apples (acid apples are better) and cut them in big pieces because they will fall apart. Put them in the pot. Season with salt and pepper

Turn up the heat and add the vinegar, when the glass of water evaporates, lower the heat and cover.

When the red cabbage is soft, add the wine with the raisins and cook over medium heat uncovered to evaporate and bind the sauce a little.
