Put the egg yolks and 1.5 packages of grated cheese (pecorino romano if possible) in a bowl and beat it. When it is integrated, add the pepper and set aside.

Add water in a pot and when it boils, cook the pasta.

Meanwhile, brown the bacon in a frying pan without oil. When it is ready, add the cooking oil to the initial mixture.

When the spaghetti is ready, add a little of the cooking water to the initial mixture (to taste). Remove the water from the spaghetti and put all the ingredients together in the pot.

Stir the mixture until creamy. Serve the Carbonara di Serra with grated Grana Padano cheese on top and a sprinkling of oregano, enjoy!
