In a frying pan fry the onion, garlic and zucchini.

While the vegetables are poached, cut the mushrooms into thin slices.

After 10 minutes of cooking the vegetables, add the mushrooms.

After 10 minutes, add, as an option, about 20 ml of white wine. Let the alcohol be consumed.

Once the alcohol has evaporated, add the rice to the pan, mix well and pour 2 glasses of water. With the fire at maximum

From here, it depends a lot on the type of rice and its quality. In this case, my rice was cooked for about 40 minutes. Add water if the rice is not yet ready. When there are 5 minutes left for the rice to be ready, add the spinach.

Once the rice is ready. We turn off the fire. Add the Parmesan. Rectify the salt.

Serve, add freshly ground black pepper. I add a few dashes of my spicy oil that I make at home. And a spoonful more of parmesan.
