Cook the potatoes and mash them a bit "coarsely". In my case I put them in a bowl and turned them with a whisk. The ideal is to make the potatoes in the microwave, baked or steamed so that the mashed potatoes will be as dry as possible.

To this puree add the milk, oil, salt and pepper and stir until well incorporated. If we want to add some aromatic herbs such as parsley, rosemary or spices, this is the moment. And we check at this moment that there are no lumps.

This is the moment to add the flour, little by little, in this step we will simply incorporate it, by this I mean do not stir it too much.

Brush the waffle iron well with oil as these waffles tend to stick, put the potato and let it cook for about 6 minutes. Or until golden brown. This step is important because if we take them out before time, the waffle tends to taste like raw flour.

To remove the waffles we can use either skewers or a spatula. These can then be reheated in the toaster or in the oven for a few minutes.
