Separate the egg whites from the yolks. We will reserve the unbroken yolks (we need them whole).

Whip the egg whites, when they begin to whip add a pinch of salt and black pepper. Once they have whipped well, set aside.

We put on a baking sheet parchment paper and spread oil on it so that the eggs do not stick to it. Preheat oven to 180 degrees.

Place the whipped egg whites on the parchment paper in the form of a nest (with these quantities we will make two nests). We will have to leave a hole in the center to place the egg yolks. We give a cloud shape to each mound.

Put the yolk in the center of each nest. Sprinkle with chives, parmesan, thyme or whatever you like. Place the slices of bread with a slice of cheese on top to melt.
