Poke Bowl with avocado and curry sauce

Prepare the quinoa if not already cooked and place it in the bottom of the bowl.

Add ingredients to taste (use your imagination): - Sweet corn. - Diced avocado. - Edamame without the pod. - Marinated salmon: cut the salmon (previously frozen) into cubes and soak in soy sauce for at least 15 min., then top with sesame seeds. *Salmon can be substituted with tuna or tofu. Other ideas: tomato, radishes, nuts, cucumber, red cabbage, carrot...

For the sauce: I always make it a little by eye and taste. For a slightly large amount we use an avocado and a little less than a whole Greek yogurt, lemon, ground cayenne (if you like it spicy) and a teaspoon of curry.

Stir everything and... Ready to enjoy!
