Lentils with eggplant and mushrooms

Put EVOO in a frying pan and let it heat up. Cut an onion into small pieces and add it to the pan.

While the onion is browning, cut the eggplant into small pieces. When the onion is golden brown add the cut eggplant.

While the onion and eggplant are browning, cut about 6 mushrooms into slices and add them to the pan.

While all the ingredients are browning, grate four ripe tomatoes. Add the grated tomatoes in the pan and two bay leaves.

While all the ingredients are cooking in the pan. Strain the cooked lentils and clean them with tap water until no foam comes out.

When the sauce is ready, add the cleaned lentils and a little natural mineral water to cover them. Let it boil for about 20-30 minutes. And that's it :)
