Meanwhile, in a large bowl, mix the cheese and egg mixture with a little pepper (without salt, as Pecorino Romano is very salty).

Cook the pasta, rather al dente and, before draining it, take a little of the cooking water in case you need to correct the texture. Drain it quickly.
