Put a saucepan on the heat and add 50 g of butter.

When it melts, add 50 g of flour (I use whole wheat flour, but you can use whatever you like). Stir with a wooden spoon.

When the flour and butter are well mixed, add 600 ml/g of milk, little by little and stirring constantly, now with a whisk, so that no lumps form (I use whole milk, but again, you can use your favorite, even vegetable drink).

Once you have added the milk, add a pinch of salt and a pinch of nutmeg. Stir and taste, in case you need to add more.

The béchamel sauce is ready as soon as the liquid is evaporating and bubbles form.

CHEF'S TRICK 👩‍🍳❤️: What do I do if I get lumps? In case you get lumps, it is usually at the beginning of the process, when adding the milk. The key is to add it very slowly, so that there are no temperature changes. In case you still get lumps, and they do not dissolve with the whisk, you can use a blender.
