🌱 Place a colander over a bowl. Grate the zucchini, add a little salt, pour a good mix and let stand 30 minutes, to drain. This way the zucchini will release its water (you can also add a weight on top to help the process). Finally, remove the juice and add the grated zucchini to the bowl.

🌱 Beat the egg in a large bowl and add the grated mozzarella, Parmesan, flour, a little salt, pepper and curry and mix everything together.

🌱Heat some sunflower oil in a frying pan over medium heat, then fry spoonfuls of zucchini mixture for about 3 minutes per side or until nice and crispy.

🌱 Place the fritters on a plate covered with paper towels and sprinkle a little salt on top. Enjoy!
