Season the tenderloin fillets with salt and pepper and fry them in a frying pan with a little EVOO. And set aside.

Cut the onion into julienne strips, chop the garlic and fry it with a dash of EVOO.

When it is golden brown add the orange juice, the parsley and the loin. Cover and cook for 20 minutes over low heat. *Stir and add a little water as needed.

We separate the loin and grind the rest to create our delicious sauce.
