Banana and coconut cookies

Put the peeled bananas in a bowl. Mash them with a blender or mash them with a fork. Add the essence, ground almonds, cinnamon and coconut.

Now add the oatmeal and stir. The amount of this will be by eye, until we get the desired consistency and that allows us to shape the cookies.

Put them in the oven, with parchment paper so that they do not stick. 15-20 minutes, until golden brown at 200 degrees.

NOTE: They can be made with many more things, but I had the pantry bare. Ground hazelnut or walnut, a little pure cocoa, chocolate chips, orange zest, with essence of something else, etc.
