Crush the cauliflower in a food processor. Put it in the microwave for 5 minutes and let it cool down. Put the cauliflower in a cloth like the ones used to make cheese or milk and squeeze until all the water comes out. The key for the pizza to come out well is to drain thoroughly. Until you think you can't do it anymore. It has to form a more or less compact dough.

Mix the cauliflower with an egg, grated mozzarella, salt and oregano.

Spread with the help of a kitchen spatula on a baking sheet covered with parchment paper. It should be thin but without holes

Place in a preheated oven at 180°C and bake for 15 minutes.

After this time we take it out of the oven and carefully turn it halfway around. Put it back on the baking paper and bake for 5 minutes. The purpose of this is that the dough is toasted and not wet.

We take it out and add the ingredients we want. In my case I made it margarita with tomato concentrate, fresh mozzarella and put it in the oven. The time will vary depending on the ingredients you put, it is to melt the cheese. When you take it out, add some fresh basil leaves and it's ready.
