Wash the eggplants and cut in half. Make slits on the flesh and pour EVOO, salt and black pepper.

Microwave for 10-15 minutes at 800W.

Let cool slightly and remove the eggplant flesh with a spoon.

Chop the eggplant flesh and mix it with the tomato and mozzarella.

Stuff the eggplant with the mixture and top with a couple of slices of goat cheese.

Heat for a couple of minutes in the microwave or until the goat cheese is melted.
