In a frying pan with a splash of AOVE we poach the onion well and once it is golden brown and well done we add the milk, pepper, salt, garlic and cumin. I added the milk by eye. We let it all cook well over low heat and when we see that everything is a little thick (not much) add the cheeses and let them all melt and everything is well integrated, stirring slowly. If we see that it is too thick we can add more milk, that will depend on the taste of each one. We pass everything to the glass of the mixer to grind well the pieces of onion and that's it! Quick, simple and delicious.
