Crush garlic and salt in a mortar and bathe the chopped chicken with it. Put oil in the casserole where I am going to put the chicken and when it heats up I add the chicken, I give it a few turns without burning the garlic, I add red bell pepper and a little bit of water. I close the pot and when the two rings rise I leave it for 5 minutes over medium heat. I take it off the heat and let the rings go down before opening it. (If you are in a hurry to open it, you can put the pot under the tap but be careful not to open it, so the rings go down before).

When I open it, I calculate the amount of water in it and discount it to add to the rice. I pour 2 ladles of water for one ladle of rice. I pour the water first and when it starts to boil I add the rice. I give it a few turns and to the fire, next to the spices that are auieran. When the rings rise I lower the heat to half and leave it for 6 minutes.
