Let the quinoa cook and cut the vegetables and apple into small cubes.

In a wok with three tablespoons of hot oil, add the vegetables and the apple until they soften (15 min), season with salt and pepper and finally add the walnuts.

At the same time that we have the vegetables in the wok, we take a small pot and pour the coconut milk along with a tablespoon of oil, salt, pepper, turmeric and curry. Stir well for about 10 minutes so that it thickens a little.

Once we have the quinoa, the soft vegetables and the coconut milk with all the spices well integrated, we mix everything in the wok. We leave it over low heat for about 15 minutes stirring from time to time until we see that almost all the coconut milk has been absorbed.

Finally, we can sprinkle grated coconut on top once served.
