Wash and cut the asparagus stalks. Cook for 4 minutes in a frying pan with a lid. Meanwhile, wash and chop the red bell pepper and the onion.

After 4 minutes, set the asparagus aside and reserve. In the same frying pan, add a few drops of EVOO and fry the bell pepper and the onion with sweet paprika for 5 minutes. Stirring from time to time. We also put the oven to preheat, 180 degrees 15 minutes.

Meanwhile, beat the egg whites. Add salt and a pinch of turmeric (for flavor and color) and parsley. When we have the peppers and onion, mix with the egg whites.

In a baking dish, grease with EVOO, add the egg white mixture and top with the asparagus, cherry tomatoes and grated mozzarella cheese.

Bake for 15 minutes at 180 degrees up and down.

Once cooked, let it cool for 10 minutes and serve with a little oregano on top. Enjoy!
